Bomb Biscuits

In case it wasn’t happening where you live, brunch was “the thing” in 2023 in the ATL. New places were popping up all over, most with long waits on Saturday and Sunday mornings. Erika Council’s Bomb Biscuits has been at the top of the breakfast heap since opening on North Highland Avenue in 2022. Known for her fluffy buttermilk biscuit (see one below) sandwiches (the restaurant was named a Bib Gourmand in Atlanta’s first Michelin guide and with Council, herself, nominated, in January 2024, for a James Beard award for Best Chef – South), I’ve been wanting to give it a try for months. But the timing never was right. On this Sunday afternoon, I determined to change that.

We arrived around 12:30 and, to my surprise, were able to get a table. I think our luck was twofold – we were in a gap (as it filled up while we were eating) and it was a week before Christmas. My beloved chose a classic breakfast- the Bomb Breakfast Plate:

Two eggs, potatoes, turkey bacon and one of those biscuits. Portions were not skimpy and her breakfast was very tasty. The lone biscuit above was mine, as I didn’t order a meal with one and HAD to find out if it was “the bomb.” It was excellent! Was it as good my wife’s? No, but this was mighty fine for a restaurant biscuit – light, fluffy and flaky. I was torn, between Maple Butter chicken & waffles and one of the biscuit sandwiches. I went for the waffle, after talking with our server.

The only disappointment in this dish was it was a waffle and not waffleS. Did I need a second waffle? No. Could I have eaten a serving waffle? Probably not, but it was so good I would have tried. While I’m not the biggest maple syrup fan, the maple butter was fabulous. I could have eaten it, on its own. The chicken was well fried and seasoned and this was a great brunch dish. I see why the lines are (usually) long.
